In 1924, Anthony J. Thomas Sr., "Tony", immigrated to the United States with his family. At the age of 14, Tony dropped out of school and took odd jobs to support the family after his father became ill. By 1946, Tony had saved enough money to open his own business, A. Thomas Meat Market, a small storefront meat market located in the Haymarket District of Louisville, Kentucky.

As A. Thomas Meats grew, they found yet another great family-owned custom meat processor right down the road in Louisville, Irish Hill. Owned by Tom Dawson and John Baker, Irish Hill Meat Company was known in the industry to be experts in custom-cut beef.
