Ingredients

  • 3 Springer Mountain Farms Boneless Chicken Breasts
  • 8 oz cream cheese
  • 2 cans white beans, rinsed and drained
  • 1 bell pepper, diced
  • 1 cup corn
  • 1 can Rotel or petite diced tomatoes, drained
  • 1 cupn chicken broth
  • 2 garlic cloves, minced
  • 1 cup onions, diced
  • 1 teaspoon Italian seasoning
  • salt and pepper, to taste
  • 1 cup grated parmesan cheese
  • 1/2 cup pesto, plus more for serving

Directions

  1. Place chicken breasts in crock pot.
  2. Add cream cheese, beans, bell pepper, corn, tomatoes, broth, garlic, onion, Italian seasoning, salt, and pepper.
  3. Cover and cook on low for about 4-6 hours.
  4. Shred chicken.
  5. Stir in parmesan cheese and pesto.
