Ingredients
- 3 Springer Mountain Farms Boneless Chicken Breasts
- 8 oz cream cheese
- 2 cans white beans, rinsed and drained
- 1 bell pepper, diced
- 1 cup corn
- 1 can Rotel or petite diced tomatoes, drained
- 1 cupn chicken broth
- 2 garlic cloves, minced
- 1 cup onions, diced
- 1 teaspoon Italian seasoning
- salt and pepper, to taste
- 1 cup grated parmesan cheese
- 1/2 cup pesto, plus more for serving
Directions
- Place chicken breasts in crock pot.
- Add cream cheese, beans, bell pepper, corn, tomatoes, broth, garlic, onion, Italian seasoning, salt, and pepper.
- Cover and cook on low for about 4-6 hours.
- Shred chicken.
- Stir in parmesan cheese and pesto.
